Yes, I've seen several people get shinies on Sleep. However, I don't have sleep so I don't know how it works.

Yes.

On rare occassions, when you attract Pokémon to the area after you sleep, there is a slim chance that the Pokémon will appear as a Shiny Pokémon.

These Pokémon have the same befriending requirements as all other Pokémon, needing you to give them biscuits to befriend them. They have no further bonuses and are largely an aesthetic change.

In addition to the wild Pokémon that you encounter in Pokémon Sleep that can be shiny, there is also a chance that the Snorlax you get as you start of the week will also have the chance to be Shiny. Like the other Pokémon there's no added benefit for it.

In addition, it's beneficial to have a higher Sleep Score and Drowsy Power if you want to find shinies. They won't increase your odds, but they'll increase the amount of Pokemon that appear after a Sleep Session.

Are the odds known?
It's theorized they're about the same as Pokemon GO's 1/450 base odds, but nothing is known for sure yet.
