Paldean Tauros itself is somewhat worse than Fire Paldean Tauros, or Water Paldean Tauros, however, it boasts a great 110 base ATK with a complementary 100 base SPE.
So I'll give you a few sets.
Banded 'Ros:
Tauros-Paldea (M) @ Choice Band
Ability: Intimidate
Tera Type: Rock
EVs: 252 Atk / 4 SpD / 252 Spe
Jolly Nature
- Close Combat
- Earthquake
- Iron Head
- Stone Edge
This set utilizes Paldean Tauros' superior speed, and ATK to check foes in RU like Drednaw, Altaria, Copperajah, and more. Due to Paldean Tauros' wide physical movepool, Paldean Tauros can obtain some very good coverage moves, such as Iron Head and Stone Edge to hit hard.
However, Banded Tauros can be checked by certain Pokemon like Flamigo, who can set up a swords dance on the switch to punish your switch. That's why I prefer tera rock, to obtain Stone Edge stab, to reduce the risk of getting killed by the abundant flying stab in RU, and to eliminate certain foes who won't be expecting it, like Jumpluff and Masquerain, who would want to either want to Strength sap it (Jumpluff), or Hurricane it (Masquerain).
This set can be also used alongside Choice Scarf.

Bulk up 'Ros:
Tauros-Paldea @ Leftovers
Ability: Intimidate
Tera Type: Rock
EVs: 252 HP / 252 Atk / 4 SpD
Impish Nature
- Close Combat
- Earthquake
- Bulk Up
- Stone Edge

Rock tera is explained in previous set, however, this set takes Paldean Tauros on the more bulky offense side. With Rock tera being more used for defensive use, which also means that you can substitute Tera Rock with Tera Steel.
Leftovers are for passive recovery.
Bulk Up is the main theme of this, abuse intimidate to force switches on physical attackers, and use the time to set up a bulk up. This can snowball up pretty quickly on teams that lack the reliable special attackers.
This can be used with any Paldean Tauros variant with Raging bull replacing EQ.

Doubles 'Ros:
Tauros-Paldea @ Safety Goggles
Ability: Anger Point
Tera Type: Ground
EVs: 252 Atk / 4 SpD / 252 Spe
Jolly Nature
- Close Combat
- Earthquake
- Iron Head
- Rock Slide

Although far outclassed by his cousins, Fire Paldean Tauros and Water Paldean Tauros as an Anger Point abuser, Paldean Tauros still does the job nicely, with access to Earthquake and Rock slide. But you must use this set alongside Frosslass.
Safety Goggles are there just due to the sheer amount of spore abusers in doubles.

This can be used with any Paldean Tauros variant with Raging bull replacing Iron Head.

Froslass (F) @ Aguav Berry
Ability: Snow Cloak
Tera Type: Ice
EVs: 248 HP / 8 SpA / 252 Spe
Timid Nature
IVs: 0 Atk
- Frost Breath
- Destiny Bond
- Helping Hand
- Light Screen

The only thing Froslass does is use Frost Breath, which is a guaranteed critical hit on an anger point Pokemon, which is Paldean Tauros.
The second thing Froslass does is to set up Light Screen to help with Paldean Tauros' mediocre spdef, that means on the first turn, Paldean Tauros has to use Rock Slide.
Destiny Bond, Helping hand, and Aguav Berry are there to just make it an okay support if you choose to swap out into your flying type before Paldean Tauros terastallizes into ground and uses earthquake.

Fire Paldean Tauros:
Gen 9 RU/UU/OU Offensive Support:

Tauros-Paldea-Fire @ Leftovers / Sitrus Berry
Ability: Intimidate / Cud Chew
Tera Type: Dragon
EVs: 252 HP / 4 Atk / 252 Def
Impish Nature
- Body Press
- Will-O-Wisp
- Protect
- Raging Bull

This set focuses on using Will-O-Wisp to cripple physical targets, which means the EVs are more physically defensive.
If you choose to use Cud Chew, you would need to use Sitrus Berry for the more immediate recovery, although I would recommend you to use Intimidate.
Body Press is good stab that also utilizes impish with 252 defenses.
Protect is there for obvious reasons to help with predicting
Raging Bull is just fire stab that could be utilized to some extent.

I recommend this Pokemon across all three tiers of Gen 9 (when this was written, there was RU, UU, and OU) due to how useful it can be, with great defenses, great support moves and so forth.

It is a solid counter to Chien Pao, somewhat solid counter to many physical attackers that are usually not setup sweepers.

Bulky Tauros-Paldea-Fire

Tauros-Paldea-Fire (M) @ Heavy-Duty Boots / Leftovers
Ability: Intimidate
Tera Type: Fighting / Grass
EVs: 252 HP / 4 Atk / 252 Def
- Body Press
- Raging Bull
- Will-O-Wisp
- Bulk Up

This is very bulky Paldean Tauros. Thanks to it's typing, it can tank the common treat in OU like Breelom, Chien-Pao and Meowscarada. Combined with Intimidate, it is getting harder to take down with physical attack. Body Press is very good with it high defense because the move damage based on it defense. Raging Bull is a nice move that can break Dual Screen with is annoyying to deal. Will-O-Wisp is a great utility that lower the damage of the physical Pokemon, especially Great Tusk. Bulk Up is good setup move to increase attack and defense make this Pokemon hit harder and bulkier. For the item, Heavy-Duty Boots is great to make Paldean Tauros can switch-in more easily. Leftovers is also good because this Pokemon is lack of recovery. Fighting Tera gives Paldean Tauros to be more offensive while Grass Tera is a good defensive tera types.

Gen 9 Monotype Choice Scarf (Fire)

This Choice Scarf set is for Blaze Breed Tauros on Fire teams in Gen 9 Monotype. Raging Bull is used for Fire STAB since it breaks screens, which is useful due to Screens HO being good in the current Monotype meta at the time of this post. Close Combat is used for a powerful Fighting STAB move. While Outrage locks you in for 2-3 turns, Outrage gives Tauros-Fire coverage against Dragon-types such as Cyclizar, Dragapult, Tatsugiri, Garchomp, and Dragonite. Earthquake provides coverage against Pokemon such as Clodsire, Toxapex, and Iron Moth.

Gen 9 Monotype Bulk Up (Fire)

A Bulk Up for set for Fire teams in Gen 9 Monotype. Bulk Up is used to boost your Attack and Defense, which is useful since Intimidate lowering the opposing Pokemon's attack can give you some setup opportunities. Raging Bull is used for Fire STAB since it breaks screens, which is useful due to Screens HO being good in the current Monotype meta at the time of this post. Close Combat is used for a powerful Fighting STAB. Body Press can be used since it takes advantage of the defense boosts from Bulk Up and doesn't lower your defense stats. Do note that Body Press is weaker than Close Combat, however. Earthquake provides coverage against Pokemon such as Iron Moth, Toxapex, and Clodsire. Trailblaze can be used instead since it boosts your speed and provides coverage against Bulky Water-types such as Gastrodon, Slowking, and Quagsire.

Aqua Form: Gen 9 NU Bulk Up

Aqua Paldean Tauros is in NU, so here is a Bulk Up set it can be use. Bulk Up boosts Aqua Pauros' attack and Defense stats, making it a potent wincon. Raging Bull is used for the Water STAB on this set since it doesn't cause recoil damage to Aqua Pauros, and it can potentially break Aurora Veil. Close Combat is Aqua Pauros' strongest Fighting STAB move, being useful to hit Pokemon such as Brute Bonnet, Goodra, opposing Aqua Pauros, Hisuian Decidueye, and Wo-Chien. Aqua Jet gives Aqua Pauros a priority move to pick off weakened fast Pokemon such as Jolteon, Salazzle, and Tornadus. Lefotvers is used to give Aqua Pauros a little HP recovery. Tera Steel gives Aqua Pauros a nice defensive typing that resists Psychic, Fairy, Flying, and Grass moves. Tera Dark can be used to give Aqua Pauros a Psychic immunity.

A Choice Scarf set Aqua Pauros can use in Gen 9 NU, making it a nice revenge killer. Wave Crash is Aqua Pauros' powerful Water STAB, being able to 2HKO Defensive Gligar and Mudsdale. Raging Bull is used alongside Wave Crash on a Choice Scarf set since Aqua Pauros may need to use a Water STAB that doesn't cause it to take recoil damage, which is useful for a late game cleanup. Close Combat is used for a powerful Fighting STAB to hit Pokemon who resist its Water moves such as Brute Bonnet, Hisuian Decidueye, Hisuian Electrode, Goodra, Tsareena, and Tatsugiri. Stone Edge allows Aqua Pauros to hit Altaria super effectively. Tera Water is used to boost the power of Aqua Pauros' Water STABs.

A Choice Band set Aqua Pauros can use in Gen 9 NU. Choice Band gives immediate power to Aqua Pauros' attacks, making them hard to switch into. Wave Crash and Close Combat are Aqua Pauros' most powerful STAB moves, dealing quite a bit of damage to Pokemon who don't resists its STABs. Aqua Jet allows Aqua Pauros to pick off faster Pokemon such as Jolteon and Salazzle. Stone Edge lets Aqua Pauros hit Altaria super effectively since it resists Aqua Pauros' STABs. Earthquake is an option to hit Qwilfish super effectively, another Pokemon who can check Aqua Pauros. The Tera Type you use depends on wheter you want Wave Crash or Close Combat to be stronger.
