Yes there is something you need to know unown cant breed its in the undiscovered egg group plus its genderless ALSO if you somehow breed an unown with another one yes the letter would change as if each kind of IVs the Pokemon has changes the unowns letter

IVs don't determine Unown's letter. Personality Values do. These things also determine Spinda's spots, or if a Pokemon is shiny or not.
