Lets say I was battling a wild Drudiggon, and it KO'ed my Golett, then I capture it. Will the Drudiggon have 1 Attack EV?
No, wild Pokemon can not obtain EVs. Source: Experience and logical deduction from the fact that wild Pokemon do not gain experience points when they KO your Pokemon so it would not make sense if they got EVs from it.
