Yes, it would evolve into Perserrker.
To add onto this, if a regional form of a Pokemon is not yet available in the game, you wouldn't be able to evolve it. For example, Sirfetch'd was not available until recently, and Galar Farfetch'd was. It just couldn't evolve. All Pokemon will evolve into the correct corresponding regional form unless it's not available, then it simply won't be able to evolve.
