So I was in the Battle Tree against a Rotom (which is why I posted this on a Rotom page) and I had my Alolamola use Knock Off on Rotom. The Rotom had used Rain Dance the same turn I used Knock Off and I disabled its Damp Rock. When I checked it said 4/5 turns left for Rain Dance. So my question is: if the rain had lasted over five turns BEFORE I knocked off the Damp Rock, would the rain end instantly or would it keep going?

It should keep going bc the Rotom used Rain Dance while it held the Damp Rock. Not sure though

It would keep going.

I think the duration of the rain is set when it starts raining and can only be changed by a weather-changing move or ability. So it'll still be 8 turns if the damp rock was knocked off immediately after it started raining.
