I would use this:

Toucannon @ Expert Belt
Ability: Skill Link
EVs: 252 Atk / 252 Spe / 4 SpD
Jolly Nature
- Beak Blast (STAB)
- Rock Blast (Ice coverage and good with Skill Link)
- Bullet Seed (Rock coverage and good with Skill link)
- Roost / Feather Dance / Boomburst (STAB)

Boomburst is a SPECIAL move, and a normal type move, no STAB, You should fix that, but nice moveset.
I know that boomburst is a special move, it was just an option, but toucannon IS a NORMAL type so boomburst does have STAB.
OH NO I FORGOT TOUCANNON WAS A NORMAL AND FLYING! my bad, haha, sorry.
But why add Boomburst as a option if it has JOLLY nature?.
Jolly does +Speed and -Sp.Atk
Ik, but you whould normaly go with roost but if you REALY wanted to you could run boomburst.

Call me crazy, but Im just worried about a speed trained toucannon's viability in general tankiness; that I fear roost would be wasted. Im not sure about feather dance either. I feel like banking those points outside of either defense secures you an average of 1-3 turns of field time. Given the ability and typing I'd personally go with fury attack instead of boomburst. It plays with skill link and gets normal STAB.

Physical Toucannon

Toucannon @ Expert Belt
Ability: Skill Link
EVs: 144 HP / 252 Atk / 56 Def / 56 SpD
Adamant Nature
- Beak Blast
- Bullet Seed
- Rock Smash
- Knock Off

Beak Blast has good accuracy + good Base Power + STAB, it does have to "charge" to be used but Toucannon is already moving last with his very low Base Speed so no worries (that's why I invested some general bulk in my set). Bullet Seed makes use of his Skill Link Ability and deals with some of his menaces. Rock Smash is a Fighting move and Fighting Moves cover a good chunk of types. Knock Off will almost always deal 1.5x damage and deals with Psychic and Dark types.

It's another one off my "all-rounder" sets, covers his weaknesses and a little more, very offensive, nothing really special about it.

I have the same.
Rock smash is so weak that bullet seed and beak blast would do more damage even if rock smash was super effective, It can know brick break which is WAY stronger than rock smash so use that instead

- Brave Bird
- Return / Brick Break
- Flame Charge
- Swords Dance

Brave Bird is strong STAB. You can run Return for a nuetral STAB move, or Brick Break to deal with rock, steel, and ice types. Flame Charge does damage and boosts your speed. Swords Dance boosts your attack.

Special Toucannon

Toucannon @ Choice Specs
Ability: Sheer Force
EVs: 252 SpA / 252 Spe / 4 SpD
Modest Nature
- Boomburst
- Overheat
- Flash Cannon
- U-turn / Hidden Power [Grass]

Even though its Special Attack is low in comparison to its physical attack, it can still be an effective Specs attacker with these moves.
Boomburst- STAB + 140 BP + Specs is going to be dealing major damage.
Overheat- Very strong Fire type move that can punish Ice and Steel switch ins.
Flash Cannon- Takes advantage of the boost by Sheer Force, punishes Rock switch ins.
U-Turn/Hidden Power [Grass]- U-Turn for momentum/scouting, Hidden Power [Grass] for Ground and Water types.

I'd normally go with this set:

Toucannon @ Leftovers
Ability: Skill Link
EVs: 252 Atk / 4 SpD / 252 Spe
Jolly Nature
- Flame Charge (to speed it up it is quite slow even with jolly max speed)
- Rock Blast (good coverage and hits 5 times due to skill link so good power)
- Bullet Seed (same as Rock Blast)
- Beak Blast (STAB and potential burns) or Gunk Shot (coverage) or Drill Peck (STAB)

Toucannon @ Focus Sash
Ability: Skill Link
EVs: 4 HP / 252 Atk / 252 Spe
Adamant / Jolly Nature
- Fly
- Flame Charge
-Rock Blast
- Bullet Seed

Focus Sash won't let you die. First use Flame Charge to gain Speed, with Rock Blast with Skill Link to cover Ice types, or Bullet Seed for Rock types.

- Rock Slide / Steel Wing / U-Turn

Rock Slide / Steel Wing / U-Turn for power/coverage/switching out (respectively).

No Speed EVs just to beat Avalanche users (who I have never come across)

speed doesnt really matter because its signature move beak blast has negative priority, use brick break instead since it is stronger
