So I am going to ev train an adamant aggron. I will max attack but I wonder, what gives me the best physical defense? max out HP or max out defense ev´s? and what is the better thing to do since HP also gives some special defense?

If you want to use Aggron to tank, then an EV spread of 252 HP, 252 Atk, 4 Def would be best.

That EV spread is for both regular and Mega Aggron. Because its Def is already high, it really needs more investment in HP in order to be able to take hits better since it only has a base 70 HP.

Ok thanks. but in theory if i invested all in defense would physical attack do less than if i invested it all in hp?
Nope. If you invested 252 EVs in Atk, then Aggron will do the maximum damage it will be able to. It doesn't matter what you invest the other EVs in. EVs in one stat will not add to or deduct from the capabilities of other stats; that's only something Natures will do.
sorry if i made myself unclear, does 252 ev´s in defense do the same % damage on my aggron when its being hit by a physical move as if i would have had those 252 ev´s in hp?
that means if a foe hits me with a physical move, would it do less damage on my aggron if i had 252Atk/252Def than if i had 252 At/252HP (252 Atk is just to show that i can only max out either Defence or HP)?
Well I ran some calculations in a damage calculator. Against a Choice Band Close Combat Infernape:
252 Atk Choice Band Infernape Close Combat vs. 0 HP / 252 Def Aggron: 520-616 (185.05 - 219.21%) -- guaranteed OHKO
252 Atk Choice Band Infernape Close Combat vs. 252 HP / 0 Def Aggron: 604-712 (175.58 - 206.97%) -- guaranteed OHKO
So 252 EVs in HP will make Aggron take very slightly less damage physically. However when facing a x4 move, it'll still be OHKO.
