What happens to stats when your Pokemon switches out?

I don't actually know the answer to this which kind of embarrasses me because I've been playing Pokemon since firered/leafgreen first appeared.

Your stats are removed, unless you use Baton Pass.

Well if you do something to raise or lower you attacks and switch out, those effects disappear and your back at square 1.
