Interacting with Pokemon is when you press "A" on a Pokemon that appears in the wild as it's overworld sprite, not in the grass like most wild Pokemon, in order to battle and capture it.
Usually this is for legendaries such as Kyurem and Cobalion, but it also goes for Pokemon like the Zen Mode Darmanitan and Volcarona.
