They change in:

• Stats
• Movepool
• Level Up moves
• Ability (sometimes)
• Gender (Only in the Marill evolutionary line)
• Typing (sometimes)
• Appearance

Comments

Not always most of the time yes for example porygon has trace and when it evolves it also has trace.
But the magikarp has swift swim but gyarados has intimidate.
Id say about 25% of pokemons abilitys change when they evolve.
