This is the most annoying Bastiodon I've ever battled:

Bastiodon (M) @ Leftovers
Ability: Sturdy
EVs: 252 HP / 4 Def / 252 SpD
Careful Nature
- Metal Burst
- Protect
- Stealth Rock
- Roar

A utility set for Bastiodon. It can use Sturdy + Roar as a failsafe against setup sweepers and use its bulk to switch in and keep rocks set up. Metal Burst is its best source of damage. Protect helps Bastiodon scout for coverage it is 4x weak to and gain HP from Leftovers.

Bastiodon tends toward SpD as there is often no point going against physical attackers which commonly use Fighting or Ground coverage.

Bastiodon @ Leftovers/Chesto Berry
Ability Sturdy
EVs: 252 HP / 4 Def / 252 SpD
Careful Nature
- Toxic
- Fire Blast
- Protect / Rest
- Metal Burst

LOL!
Toxic is stalling and works well with the nice bulk.
Fire Blast is to try to get steel types out of there, and actually does some damage to Ferrothorn and Forretress if you decide to use it in OU.
Protect helps stall, while Rest is nice with the bulk and this can really piss an opponent off.
Metal Burst is good on Bastiodon generally, but it does good damage when the opponent attacks and works well because Bastiodon is slow.

Gen V Set for Shieldon/Bastiodon

Shieldon/Bastiodon (M) @ Eviolite/Leftovers
Ability: Sturdy
EVs: 252 HP / 128 Def / 128 SpD
Careful Nature
- Metal Burst
- Toxic
- Magnet Rise
- Stealth Rock

Metal Burst is Bastiodon's best source of damage. Toxic acts as a deterrent to sweepers hoping to take advantage of Bastiodon's passivity. Magnet Rise is an interesting option that Bastiodon could use against a predicted switch to a Ground-type, allowing it to persist in setting up rocks and spreading poison.

Gen 9 NU IronPress

Bastiodon @ Leftovers
Ability: Soundproof
Tera Type: Fairy
EVs: 252 HP / 4 Def / 252 SpD
Calm Nature
IVs: 0 Atk
- Iron Defense
- Body Press
- Foul Play
- Rest / Stealth Rock

(Credit to Pokeaim for the set that was used in a video) An IronPress set Bastiodon can use in Gen 9 NU. This set utilizes a couple of new toys Bastiodon can use in Gen 9. Bastiodon gets access to Body Press, giving it a move to take advantage of its high defense stat. With Iron Defense, Bastiodon can boost its defense to make Body Press more powerful. Foul Play allows Bastiodon to hit Ghost-types such as Decidueye and Palossand super effectively. Foul Play can also be useful since Bastiodon doesn't have a high attack stat, meaning it can be used to hit Pokemon who boost their attack stat should Bastiodon be unable to find the time to get off an Iron Defense. Rest gives Bastiodon HP recovery if you don't mind the two turns of sleep. Stealth Rock can be used over Rest if you have Wish support on your team. Leftovers is used to give Bastiodon a little HP recovery. Tera Fairy is used to get rid of Bastiodon's 4x Fighting and Ground weakness while giving it a decent defensive typing. Soundproof is used since Tera means Bastiodon won't be getting one shot by 4x super effective moves as it would have in earlier generations. Plus, Soundproof is useful to check Pokemon such as Toxtricity.

Gen 9 NU HO Lead

Bastiodon @ Custap Berry
Ability: Sturdy
Tera Type: Ghost
EVs: 252 HP / 252 SpA / 4 SpD
Modest Nature
IVs: 0 Atk
- Stealth Rock
- Metal Burst
- Steel Beam
- Ice Beam

A HO lead set Bastiodon can use in Gen 9 NU. Yes, the set is cheesy, gimmicky, whatever you want to call it, but it is quite funny, and it actually works. You should use this lead set on HO teams if you don't care about hazards going up on your side. Stealth Rock is used to setup a hazard that chips opposing Pokemon switching in. Metal Burst allows Bastiodon to deal out quite a bit damage to opposing Pokemon should Bastiodon get hit with a move that makes Metal Burst deal out a lot of damage. Once you get to Custap Berry range, you want to use Steel Beam if you setted up Stealth Rock earlier. Custap Berry lets Bastiodon get off a fast Steel Beam, which is useful to generate momentum to prevent a Rapid Spin or Defog from opposing Pokemon trying to get rid of Stealth Rock since Bastiodon being at Custap Berry range means Bastiodon will faint when it uses Steel Beam. Ice Beam is used to punish Flygon, punishing Dragon Dance Flygon sets in particular since they think they force a switch from Bastiodon since it is 4x weak to Earthquake, letting Flygon get a turn to do the ritual known as Dragon Dance, only for Flygon to get blasted in the face by an Ice Beam from a Bastiodon of all Pokemon. Sturdy is used so Bastiodon can survive powerful super effective move used on it. Tera Ghost is used to prevent a Rapid Spin should Bastiodon not be in Custap Berry range or have its Custap Berry knocked off, though you're not going to end up using it 99.9% of the time. The set uses Max HP and Max Special Attack EVs since Bastiodon doesn't want to use Speed EVs on this set due to Metal Burst. You could justify just doing 252 Special Attack EVs with 0 IVs in the HP, Defense, and Special Defense stats so Bastiodon can deal out more damage with Metal Burst.

Soo, umm, yeah. There you have it. Funny lead set Bastiodon can use on HO teams in Gen 9 NU. Enjoy!

Gen V

Bastiodon (M) @ Air Balloon
Ability: Sturdy
EVs: 252 HP / 128 Def / 128 SpD
Impish Nature
- Toxic
- Stealth Rock
- Metal Burst
- Sandstorm

A lead/utility set that can be used to set rocks and Sandstorm. Air Balloon helps Bastiodon use more setups against Pokemon with Ground-type attacks, and Sturdy means it is very likely to succeed in setting rocks.

Gen V
Bastiodon @ Chesto Berry
Ability: Sturdy
EV: 252 HP / 4 Def / 252 SpD
Relaxed Nature
- Metal Burst
- Rest
- Taunt
- Stealth Rock

Bastiodon lacks recovery options outside of ChestoRest, which this set aims to make use of. Taunt can be used to prevent set-up sweepers taking advantage of Bastiodon, though be wary that Bastiodon's slowness limits its utility.

Bastiodon (M) @ Leftovers
Ability: Sturdy
EVs: 252 HP / 252 SpD / 4 Atk
Adamant Nature
- Toxic
- Metal Burst / Iron Head
- Rock Slide / Stone Edge
- Rest

This is an awesome moveset for Bastiodon I think.
Toxic. It's obvious. Put your enemy on a timer.
Metal Burst is just my preference, you can use Iron Head but I like that Metal Burst deals double the damage you took. Just think of it as a superior version of Bide!
Rock Slide and Stone Edge are both good STAB moves, I just like Rock Slide more.
Finally, if Bastiodon is taking too much damage, just use Rest.
You can also use either Sleep Talk or Protect instead of Rock Slide/Stone Edge if you want more stalling moves.

Bastiodon @ Leftovers
Ability: Sturdy
EVs: 252 HP / 252 SpD / 4 Def
Impish Nature
- Toxic
- Stealth Rock / Protect
- Rest
- Double Team

If you get a good first entry opponent free double teams, if I know my opponent has a fighting or ground move I switch to my Dragonite which is also tanky build and moveset they synergize effectively.

My Bastiodon is not really your typical Toxic-Staller, so here is my Bastiodon moveset.
Bastiodon (M) @ Figy Berry
Ability: Sturdy
EVs: 252 Def / 252 SDef / 4 Atk
Nature: Brave (+Atk, -Spe)
Counter (Helps with those Physical-Fighters + Sturdy)
Stone Edge (STAB + Good Power)
Metal Burst (Helps with Special-Fighters + Sturdy)
Stomping Tantrum (If the opponent Sets-Up and you try to Counter/Metal Burst, this does Double Damage.)

Note: Bold words are suggested things. Bold and Italic words are non-optional and heavily suggested things.

Defensive Wall/Multi Battle Partner
Bastiodon @ Sitrus Berry/Leftovers
Ability: Sturdy
EVs: 4 Def / 252 SpD / 252 HP
Nature: Gentle / Impish
- Iron Defense / Toxic
- Protect / Wide Guard
- Ancient Power / Rock Slide
- Flash Cannon / Metal Burst

Iron Defense/Toxic: The former is for upgrading its already outstanding Defense, while the latter is a normal stalling and defensive move

Protect/Wide Guard: For critical situations. The latter protects you and your teammate from Surf, Rock Slide and others

Ancient Power/Rock Slide: STAB, the former's Omni Boost helps a lot on defenses, while the latter helps with some flinching and average damage

Flash Cannon/Metal Burst: STAB, the former, when used in a double battle may lower Sp. Defense for teammate to finish, while the latter can be used to counter the opposing Pokémon's attack and making the enemy switch in to another Pokémon

Hope this helped! Comment if I made any mistakes so I can fix them.

One of the best moveset for my favourite wall-Bastiodon:

Bastiodon @ Leftovers
Ability: Sturdy
EVs: 252 Def / 252 SpD / 4 Atk
Adamant Nature
- Toxic
- Protect
- Rock Tomb / Iron Head
- Stealth Rock / Double Team

Toxic (best for walls)
Protect (stalling)
Rock tomb (high pp's stab) or Iron head (high accuracy stab) {I do prefer rock stab as it takes care of many major typings i.e.flying, fire}
Stealth rock (extra damage) or Double team (2-3 uses will make basti untouchable)
I do prefer Rock stab as it takes care of many major typings i.e.flying, fire. I also prefer double team over Stealth rocks as it works out with toxic. Use these moves and you'll have fun and badges

What item?
Oh I am really sorry I forgot to add it.
You can use -
Leftovers (it will go hand in hand with toxic)
