So was playing Pokemon Y and ran into a double battle VS a Machoke and a Mr. Mime. The Machoke used Low Sweep on my Honedge, AND IT HIT. Honedge is a Ghost-type and Low Sweep is a Fighting-type move. So how did it hit???

I haven't played X and Y so I don't know what battle this is, but the most likely answer is that Machoke used Foresight on Honedge.
Could you provide more info about this trainer, like the level of the Pokemon and  the route?

Assuming that you were battling Brains & Brawn Frank & Sly on Route 11 (as this is the only doubles battle with a Machoke I can find in XY), their Machoke has got the move Foresight. Foresight allows the user to use Normal and Fighting moves on Ghost types. Chances are, his Machoke used Foresight, allowing it to hit your Honedge with a super-effective Low Sweep to take it out.

I don't think he used that tho. This was the second turn of the battle and I know he also used Low Sweep on the first turn of the battle. Or I'm just really dumb?

Do you have a video of the Machoke using low sweep on turn 1?
No Guard affects accuracy, not immunities, so Low Sweep still wouldn't have landed. Did the attack land super-effective damage? If not, then Honedge's type might've been changed with Soak, but I doubt that.
It’s very likely he used foresight on turn 1 and you misread/misremembered.
I guess I forgot how to count to 3 XD
