If a Pokemon uses Trick and receives a choice item, that item was not in place at the moment of the move being used, so it doesn't lock in yet. On the next turn, the Pokemon can choose any of its moves, and will then become locked into that (unless it uses Trick again and successfully gets rid of its item).
