I was watching Pokemon Sun and Moon on Netflix when I saw Alakazam used Psychic on Umbreon and Zoroark, and it worked. Why did that work? I saw Steel-types having immunity to Poison-type moves in the same series. Hypno used Hypnosis too.

I know that this has consistently happened throughout the anime.
The TV show is a very unfaithful adaptation of the games. There's no reason to expect them to pay any attention to the game mechanics.

While that is indeed true, there is a actual reason why psychic worked: Miracle Eye (if it was Faba's Alakazam, of course)
Miracle Eye is a move that makes the user ignore the target's evasion boosts and (if the targert is dark type) its Psychic immunity, meaning Alakazam can hit opposing Dark types with Psychic after it uses Miracle Eye
