Why did Team Galactic try to steal Professor Rowan's Pokedex?

I don't think it was explained on more depth. If anything, they probably wanted to see information about a pokemon or which ones evolve. Also, I don't think it was the pokedex they were trying to steal. It was the results of the professor's research. It was Dawn or Lucas' pokedex that they tried and successfully stole

I think Rowan found that evolving Pokemon somehow generate energy, and Team Galactic wanted to learn how to use that energy.

Just like KyokaSuigetsu said, it they wanted the research that Professor Rowan has gathered. Think about, Rowan is the lead researcher on Pokémon in the Sinnoh Region. He is the first to discover almost everything new about a Pokémon. NOw, by stealing his Pokédex, you get all the latest data on every Pokémon. Also, not only do you get data from Sinnoh, but also from Kanto where he spent 4 years studying Pokémon. Also, he specializes in evolution, so that could be another factor. He discovered that 90% of Pokémo n are connected. to each other via evolution. So, I believe the reason Galatic tried to steal Rowan's Pokédex was for all the latest research on Pokémon in Sinnoh and information on Pokémon in Kanto. I hope this helps!
