Definitly Machamp. Here's why:
So Machamp has 130 Attack, which is its main selling point, and excellent bulk in 90/80/85. Unfortunately, he has a god awful speed stat of 55. Machoke, in constrast, is greatly overshadowed by its evolution. With only 100 Attack, and 80/70/60 defenses. With Eviolite, that's 80/105/90, which is slightly more than Machamp's I guess, but in return is very weak to Knock Off, sacrefices 30 Attack, 10 HP, and 10 Speed for a little bit more bulk, and Machamp isn't supposed to be a tank anyways. If you HAVE to run a tank Machamp, Machamp can still be a better tank than Machoke

EVs: 252 HP/252 SpD/4 Def
Careful Nature
- Dynamic Punch
- Bulk Up
- Rest
- Knock Off
Keep in mind this set still sucks, but it's better than the Machoke one. And if you really want to use the Machoke set, here's a better Machoke Eviolite set

EVs: 252 HP/212 SpD/44 Spe
Careful Nature
- Dynamic Punch
- Knock Off
- Sleep Talk
- Rest
Again, don't forget Machamp can do this better as he can hold a Chesto Berry, Leftovers, or even an Assault Vest.
Conclusion - Machamp is in every way far superior to Machoke.
