How are the 5IVs from the Destiny Knot picked?

Like is it always 3IVs from one parent and 2IVs from the other? Or is it possible to get 4IVs from one and 1IV from the other?

Well from Gen 6 onward, the Destiny Knot states that the offspring will have 5 of the combined 12 IV's from both their parents to be passed down. So to answer your question, ANY combination between both parents are possible

0 and 5 IV's
1 and 4 IV's
2 and 3 IV's
3 and 2 IV's
4 and 1 IV's
5 and 0 IV's
where the first number is the 1st parent and the second number is the 2nd parent
