Because there is no Season system in X/Y/OR/AS, Deerling and Sawsbuck will be locked to the seasonal form you obtain them in. Wild captures in the Friend Safari (X/Y) and on Route 117 (OR/AS) will default to Spring form.
To get the other Season forms, you will have to send them through PokeBank from a gen 5 game in the corresponding season.
