Here is a gen 8 update
The highest base stat total over all is Eternamax with 1125
Highest defense/sp defense is eternamax with 250
Eternamax ties with highest HP stat
dont know if this counts though since eternamax isnt obtainable and only appears for a single battle

The highest base stat of any individual Pokemon is Blissey's 255 HP. One day we might see something break that, but we'll have to wait and see now.

You cannot get more than 255 on any stat because that is the maximum 8 bit number, which is what pokemon runs.
