I'm not sure which one would be more viable for my team. Originally, I had a dual screen Espeon, but I realize that it might not be able to setup both screens, so I went with just using one. Not sure which which would be better though since I can see situations where one is needed over the other.

Here's my Espeon at the moment:

Espeon @ Light Clay
Ability: Magic Bounce
EVs: 4 Def / 252 SAtk / 252 Spd
Timid Nature
- Psychic
- Shadow Ball
- Dazzling Gleam
- Reflect / Light Screen

If you really want to use Dual Screen Espeon, throw out Dazzling Gleam and use Both Reflect and Light Screen. Also, if I may make a change to your EV spread, use 252 HP over 252 Special Attack to ensure you tank hits better.

I kind of wanted to keep Espeon as a bit of an offensive threat as to surprise the other team hence why 252 Sp. Atk over HP and one screen. If I were going for an Espeon with that in mind, which one do you think is better?
tbh, Screens Espeon isn't really meant to dish out damage. Its meant to set up protection for your other Pokemon who can set up and rip up your opponent's team by tanking hits. Psychic and Shadow Ball are nice coverage moves that can help you take out slower fighting types. Also, Shadow Ball is also no longer walled by Steel types, so you can still hit a number of things. Just go with whatever you want.
