Well I will take a shot at this I guess

Firstly I will start with the one that makes the magic happens:

Eevee

Eevee is quite a cool Pokemon, especially if you have a little cup battle with someone for thanks the the ability in Adaptability it's STAB normal type moves hit like no other. As for it's Nature I recommend one that either raises it's speed or attack but doesn't lower any. The Jolly Nature is often considered as it's best nature as it will be fast enough to perform a notable sweep that once started is pretty hard to stop. I recommend Jolly Nature because it's the only nature that will boost speed and not touch it's attack or defense typing. The raise in speed will make it just fast enough to outspeed many Little Cup Pokemon. Adamant is also a nice nature and works pretty much like Jolly just with favor in attack. So if you don't mind having to risk the chance of having more chance in being outpaced, then go for Adamant. But if you want to be able to hit a hard (Not as hard with Adamant) and be fast the Jolly is the Nature to go with

Hasty/Naive, Lonely are also good natures to run on Eevee but if you are not going to use a mixed set on Eevee then Jolly and Adamant or the way to go

Vaporeon

In overall stats Umbreon seems to the bulkier compared to all the Eeveelutions and in fact, it is very bulky but thanks to it's HP and wonderful abilities, Vaporeon will notably survive much longer then Umbreon should it be in rain. Anyhow, Vaporeon has a higher base special defense then defense stat, for this reason investing in it's defense would be way more handier as it will take special attacks relatively good anyways thanks to it's good special defense. To do this it is recommended to go with the Bold Nature on Vaporeon if you are planning to go with Vaporeon the tank/wall. A physically defensive Vaporeon is very annoying as it is the only Pokemon with a base 60 defense that can take a choice Banded Outrage from Black-Kyurem who has a blistering base attack stat of 170.

Anyhow if you want to go for the rather rare offensive Vaporeon who is in fact very deadly Modest is the way to success as it will raise it's special attack and not lower any of it's vital stats. With a raise in it's already high special attack it will be able to nearly OHKO-2HKO everything that comes it's way barring a few grass type Pokemon.

Jolteon

Jolteon's incredible speed enables be one of the fastest Pokemon available. Thanks to it's base 130 speed an nice base 110 special attack stat, investing in more speed is always fun as there are enough items that can help you boost it's special attack stat like the Choice Specs,/Life Orb, For this reason I recommend running a Timid Natured Jolteon because with this nature, there is no unboosted Pokemon in the entire OU tier barring (Ninjask who can be used in OU). There is little use in boosting it's defensive presence for though it has a nice base 95 special defense, it will be hit with a physical move almost 98% of the time and unlike Vaporeon that has HP to boost it's bulk to extreme levels, Jolteon has a low base HP so for this reason running he Timid nature will seem to be your best bet. With this you can easily keep scouting until a Pokemon has died, though if a Pokemon resists Volt Switch you can always hit ridiculously hard with a coverage move such as Signal beam.

Flareon

Flareon is a hard one. It has formidable stats for a fire type Pokemon but it's drawback is that it has no powerful STAB move for it's highest stat, attack making it rely on weak physical type moves such as Flame Charge and Fire Fang. Howeverr it was also granted a very high special defense stat and it's special attack is certainly not bad so for this reason I will suggest 2 natures that I would say are good and useful and give their best points so that you can chose the one that is most suited for you

Adamant

Adamant seems like the most logic nature for it seeing as it has a base 130 attack stat but when you look at it's ridiculously shallow movepool. However with the release of Black and White 2 it has been graced with some relatively good Move tutor moves once more. Though you there is only like one effective physical competitive set for it, it can be worth trying out it's physical set where Adamant plays a huge role in it as it will enable Flareon to be quite the offensive presence.

Calm

I personally think that a Calm Natured Flareon is the best Flareon mainly because with some investments in it's already high special defense Flareon can be an incredibly hard Pokemon to take down and it's movepool seems to compliment it a lot. With the calm nature it is even capable of absorbing a few water type attacks without the need of sun, though sun would make it quite a special wall. So if you like to stall out your opponents Calm is the way to go though it must be stated that it is in this aspect a little outclassed by Umbreon this is pretty much one of the most effective natures you could run on Flareon

Continued below due to the character limit. I am so sorry :/

oh lolz, sorry Hex xD

Espeon

Espeon can run many natures with many sets but I should say that the Timid Nature seems to be present in all it's roles barring the Calm Mind set. With the Timid Nature Espeon draws in speed as well as outpace many Pokemon standing at 350 speed with a Timid Nature at Max with EV and IV investment. I personally think it is much more effective boosting it's speed then it's already high Special attack for seeing as Espeon is pretty much an ideal picture of a fast special sweeper or a fast support, it will need every ounce of investment in speed to be used to the maximum. With the Timid nature it can be fast enough to set up enough on many more Pokemon as it can with the Modest Nature which seems very interesting as it turns Espeon into a complete monster with such a special attack stat but unlike the more bulkier variants on Espeoeon, the Modest Set often doesn't have enough bulk to risk moving last more often.

Umbreon

Umbreon's movepool is pretty similar to Flareon's but unlike Flareon, Umbreon has a really low offense presence and with this it would only be a waste of energy investing in an offense set for it because not only it's offense stats but also it's movepool don't agree with offense. However it's overall bulk is the highest compared to all the Eeveelution and by this has the highest special defense of all of them. So I recommend running a Calm Natured Umbreon as it will enable you to sponge every special attack aimed at it as well as pretty much numbing the power of Focus Blast. With an already high defense stat it will now be a very hard Pokemon to counter on both it's defensive side though it will be relatively invincible on the special defensive side.

Leafeon

Leafeon is the only Eeveelution that still has that bright attacking ability that it once had as an Eevee and for this reason Jolly nature has returned. Like Eevee it could also run the Adamant Nature.

The Jolly Nature is often considered as it's best nature for it as it
will be fast enough to perform a notable sweep that once started is
pretty hard to stop. I recommend Jolly Nature because it's the only
nature that will boost speed and not touch it's attack or defense
typing. The raise in speed will make it just fast enough to outspeed
many NeverUsed Pokemon. Adamant is also a nice nature and works pretty
much like Jolly just with favor in attack. So if you don't mind having
to risk the chance of having more chance in being outpaced, then go
for Adamant. But if you want to be able to hit a hard (Not as hard
with Adamant) and be fast the Jolly is the Nature to go with

quoted from my explanation for Eevee with a few tweaks done

Glaceon

Glaceon shares the title of having the highest special attack stat amongst all the Eeveelution with Espeon and it is therefore the only Eeveelution I recommend and say has Modest to be it's best nature for it is such a hard hitting Pokemon with this Nature equipped. Should it be holding the choice specs, there would be only a few amount of Pokemon still standing after being hit by it's STAB Ice Beam. Boosted by the Modest Nature, Glaceon can reach a max 394 special attack. With this it stands to be one of the Pokemon with the highest base. Unlike Espeon, it's bulk lies at a really high level and though it has many weaknesses due to it's typing, the Modest Nature turns it into a prominent Bulky special attacker and for this reason I support the use of Modest on Glaceon

Sylveon

Sylveon is most commonly run as a powerful special sweeper, so Modest or Timid are the best natures in most cases. However, if you're running a Calm Mind set with Wish for healing, Bold can also be used to patch up its defense, since you can already boost your Sp. Atk and Sp. Def.

I'll have you to note the 4 best natures.

Vaporeon

Vaporeon. The Water Eeveelution. Here we go:
Vaporeon has an acceptabel speed, a bad attack, bad defense but good special defense and great special attack.

So it could be:

  1. Modest (Raising his alright sp.Attack by reducing his bad attack)
  2. Quiet (Also raising the sp.Attack, but here, you reduce its speed, making it a perfect sweeper in Trick Room team)
  3. Sassy (Like Quiet, and for the same reasons, but being Sassy, Vaporeon can play the role of Chansey or Blissey with resistance and at least, a defense stat)
  4. Calm (You can play a Calm Vaporeon if his role is to be a special wall. You will have Leftovers, + Hydration and Aqua Ring and Rest.)

Jolteon

Jolteon, the Electric Eeveelution. Here we go:
Jolteon has a bad attack with a slightly better defence but still bad. Its special attack is very good, it has the same sp.Defense as Vaporeon and Finally, he has a huge Speed.

So it could be:

  1. Timid (His monstrous 130 base speed will further raise, and the attack stat that -my faith- you'll never use will decrease. You're a winner in any match.)
  2. Modest (His very good sp.Attack, if raised, can transform him into a dangerous Special Sweeper, with some EV investment.)
  3. Calm (Perhaps a Calm Jolteon can be a nightmare and an annoying monster: Volt Switch must be for this to work, and Toxic, too, or even Thunder Wave will be OK)
  4. Gentle (This will raise his sp.Defense, but at the cost of the defence. You'll have a hard time with Psyshock, though.)

Flareon

Flareon. The Fire Eeveelution. Here we go:
Flareon is a bad Pokemon. His movepool doesn't let him abuse his monstrous attack stat, by ending up with Superpower and Giga Impact as best moves. At least, it has a decent sp.Attack and the other stats are all bad. You may in fact have no reasons running Flareon over Leafeon, as Leafeon can abuse at least of his attack with Leaf Blade.

So it could be:

  1. Brave (Like Vaporeon, a sweeper in Trick Room. Brave raises the attack by decreasing speed. Never run it without Trick Room, though.)
  2. Naughty (Raising up the attack may end up with a devastating Superpower that Aggron won't easily resist, except sturdy. The downward is the sp.Defense.)
  3. Lonely (The same as for Naughty, but downgrading the defense.)
  4. Jolly (May arrange the lack of speed if Nitro Charge is in the moveset.)

Espeon

Espeon, The Psychic Eeveelution. Here we Go:
Espeon is my fav' among Eeveelutions, and Umbreon is the second. Espeon is an awesome special sweeper, and have a decent sp.defense, while, unfortunately, having a horrible attack and defense and no extra HP.

So it could be:

  1. Modest (Raising further the Sp.Attack while downgrading the attack that you won't use.)
  2. Timid (By still downgrading a useless stat, the speed ups, though Scarf arrange the problem.)
  3. Mild (In a Focus Sash Espeon, if the goal is to abuse Focus Sash, this will decrease the defense to raise his talent of special sweeper.)
  4. Hasty (Viable, like Mild, but here, the speed is in augmentation.)

Umbreon

Umbreon. The Dark Eeveelution. Here we go:
Umbreon has a decent HP stat, bad attack and special defense AND speed, but excellent defensive, especially his monstrous sp.Defense.

So it could be:

  1. Careful (You won't teach him special attacks, and you get the sp.defense higher and higher.)
  2. Impish (This can be the balance of a wall, having its Defense and sp.Defense at almost the same stage, plus removing that weird sp.attack utility on him.)
  3. Brave (Weird, uh ? This could be used alongside Trick Room Team and Assurance, even if his attack isn't extra. It can be a surprise.)
  4. Relaxed (Bringing the needed Balance between Defense and sp.Defense is always good. The better, is that the downgrade of speed can help in a Trick Room Team, ending up with Toxic and Assurance first.)

Leafeon

Leafeon. The Grass Eeveelution. Here we go:
Leafeon is a decent physical sweeper, although you can have better. Leafeon's typing make it a perfect Sun Physical Sweeper, outclassing the useless Flareon. The Defense, surprisingly, is even better than the attack and speed, so he can deserve a staller role.

So it could be:

  1. Jolly (The physical sweeper, balancing his speed.)
  2. Impish (OK, quite weird, but Leafeon can quickly become annoying if used correctly. Toxic can be a first step.)
  3. Adamant (Don't care for the speed. Search Power. Power and Power.)
  4. Lax (This is viable if you have a sensible to physical Pokemon, so you can switch to Leafeon and let him take sturdily the hit.)

The Last one.

Glaceon

Glaceon. The Ice Eeveelution. Here we go:
Glaceon has bad HP, attack and speed. Though, his defense and special defense are good enough to stall non-supereffective moves. And finally, his sp.Attack is very high.

So it could be:

  1. Quiet (Trick Room Sweeper.)
  2. Timid (Scarf is mandatory, EV investment must be perfect, and what's on. The goal is to outspeed and hurt Dragons, awaiting for Sylveon to do the job later.)
  3. Relaxed (Can be handy in a Trick Room Team. Your Glaceon must so run no speed IV to ensure him to stall and perhaps sweep.)
  4. Calm (Glaceon can be an effective staller if the investments are right. And the balance we need between defense and sp.defense is no longer a problem.)

umbreon
ev spread
252 Spdef, 252 Def, 4 attack

Nature
okay in all truth it's weakest stats are its speed, Attack, and spAttk, so you want a nature that lowers those stats. I myself personally would choose a nature that lowers special attack or speed (like seriously who are you out speeding, and are you really going to be using that special attack?). That natures that lower those stats I recommend are

  • relax (+defense - speed) (recommend)

  • sassy (+spdef -speed) (not really all that good for this Eeveelution since it's spdef is its highest stat)

  • Brave (+attack - speed) (... Not recommended since it's attack is really pitiful, but sure I guess)

  • Impish (+defense - spAttk) (is tied with relaxed as a top nature)

  • Adamant (+ attack - spAttk) (Meh it's the last one I would pick)

  • Careful (+spDef - spAttk) (the same problem I have with sassy)

Move pool
Depends and this is my first time doing this so I'll recommend a move if you're running a attacking umbreon, curse, +attack, +defense other than that if your running defensive you can go for ... Idk, I'm not all familiar with Pokemon moves so if someone could recommend something that would be great.

I will be doing the other Eeveelutions at a later time cause I need to do some research for them

I've noticed these are all Gen. 5 and below, so I'll do Sylveon:
Its best stats are its Sp. Attack and Sp. Defense, so we can't lower those.
NOBODY will use its Attack stat, so I would lower that.
And it needs good speed.
I'd go for either a Timid or Modest nature, and Bold would work too.
