Every time it says "a bite!" I press A and it gets away. I never dealt with this problem in FireRed or LeafGreen.

Try pressing A a BUNCH of times.
All i can really tell you is be faster :P
Literally be quick about it.
You need to press A the moment it says that a Pokemon has bitten your lure.

Make sure you press A exactly once when it says "Oh! A bite!" Pressing A a bunch of times or pressing A when it doesn't say "Oh! A bite!" will make the Pokemon get away.

I took alot of time to get this right as well.
The moment you get a bite press A. If you delay for too long the Pokemon will flee and you lose your fishy ;-;
You'll have to do this several times in order to finally battle the Pokemon (It may be as short as just 1 time or maybe 5+ times) - complicated I know. Don't worry if you fail alot, it happens, Emerald fishing is really difficult.

Go up to the water and select it, then fish! When it says: Oh! A bite!; press a once...
(AS SOON AS IT SAYS THAT...)

For the Super Rod in Emerald you need to hit A once it says Oh a Bite!, but it'll start the fishing again and youll have to chain multiple (Oh a bite!) in a row. Patience is key and make sure not to spam the A button when you see the bite pop up.

Ok so you need to press the a button once then just wait of "oh its a bite"

Here is a tip, if you get the first one correct, each consecutive is easier since it is for sure a "oh its a bite".
Another TIP : Look at the bottom of the dots and not on the dots, because you should press a when you see something on bottom.
The print "not even a nibble" is printed in the same row as the dots, so press a when anything appears below the dots will always hit correct
