Right now I know that non-legendaries disappear forever in Emerald and Platinum, and legendaries in Emerald (not sure about Platinum) reappear when the player leave and re-enters the location. I heard that they all disappear forever in some games, or they reappear when the player defeats the champion. Please don't question my curiosity.

im pretty sure that if you try to run from ultra necrozma or some other main-story legendary it'll tell you something like "The Pokemon is eager to battle you!" and bring you back to the move selection screen.
It depends on the Pokemon in question, I guess... Which ones are you curious about? Just legendaries in general?

In Pokemon Omega Ruby, I faced Azelf. I went away for a while. After, I went back and ran away because I had no idea what I was doing. I ran, and Azelf never came back.

When I was a kid I was playing D/P and I was trying to catch Azelf. I thought it would later become a roamer because Mesprit is as well, so I ran away. Azelf never came back, ever
I would like to answer this by replaying White or White 2, would me trying to run away from Reshiram be enough of an answer for you?
I definitely would like that, but I don't think it would be a complete answer. While you're playing, can you try running from a non-legendary, like Darmanitan or Volcarona?
Then what would you consider a complete answer? If someone played every main series game and tried to run away from every static Pokemon? Because that's never going to happen.
Snorlax and Sudowoodo disappear forever if you run from their encounters (when using Squirt Bottle or playing Pokéflute on the Radio) in HG/SS. :P
Only some legendaries reappear. An example of this is the FRLG legendary birds. Whereas in other games like diamond, the Pokemon don't come back. You can always try saving before a legendary, and then using a runaway Pokemon. Then, you exit then go back in the area with the legendary to see if it is still there. Hope I helped.
If only some legendaries reappear, which ones? This doesn't completely answer my question. I can't always try saving before a legendary because I don't have a copy of every game.
Pokemon RSE don't have Pokemon that reappear when you run away. Pokemon LGFR do. Pokemon DPP don't have Pokemon that reappear when you run away. (Unless you count roamers, which don't dissappear.)
What about the other 22 core series games that you haven't mentioned?
The later the gens go, then they probably won't have pokemon that come back. You can't seriously think I have all the main series games. I thought this was just gen 3 and 4...
I never said this was only gens 3 and 4. I said gens 3 and 4 are the only ones I already know about.
Does this count Crabrawler from the berry piles in U/M and US/UM? If you interact with berry piles that contain Crabrawler, and you run away, Crabrawler will stay in the berry pile until you either catch or defeat it.

In Generation I and II games, in most instances, if the player runs from any of these Pokémon, it becomes permanently unavailable.
However, in Pokémon Gold and Silver, the Electrode in Team Rocket HQ will remain even if run from.
Starting in Generation III, if the player runs from a Legendary Pokémon, the Pokémon reappears when the player leaves and re-enters its location, but other Pokémon still become permanently unavailable. Starting in Pokémon Platinum, if the player defeats or runs from an in-game event Pokémon, then it reappears next time the player enters the Hall of Fame.
In some games, Pokémon can be disguised as fake item balls. Voltorb, Electrode, Foongus, and Amoonguss can all appear in these ways. They do not reappear if the player defeats or runs from them.
