So like most Pokemons evolve in the overworld but when I evolved fletchling it was like the standard evolution screen. and I saw someone say that their fletchling evolved in the overworld, so how does it happen?

It depends on where your character is.

Throughout my playthrough. I’ve noticed that Pokémon will evolve/hatch on the alternative screen in the following situations:

  • On a slope
  • On water
  • in buildings
  • crowded areas

Otherwise, the game will try to show it in the overworld.

Disclaimer: the game is still new, and this is my own experience. This answer may be missing certain situations. I was not able to find a source to verify these are the only situations.

If you evolve your Pokemon inside a building it will have the classic evolution animation

How do you know this?
I evolved one of my mons inside a building and it was the classic animation
How do you know it was caused by the building and not something else, like the Pokemon's species or evolution method? Did you try soft resetting and then evolving the same Pokemon outside?
I swear the the traditional animation happened in the overworld but that was me hypothesis
