An instance in any media (anime, manga, official artwork, etc) where the move Bite was used on a ghost type?

Actually, I don't think that happened. Bite was just a move like Scratch, it was supposed to be a normal move. I don't think the Anime/Manga will show something like biting on a Ghost type.

In Generation I, it was a Normal-Type move, but in Generation II and onward it is a Dark-Type move. So, the move Bite would not have been able to have affect on any Ghost Type Pokémon prior to Generation II, since Ghost Type Pokémon are immune to Normal-Type moves.
