Cofagrigus's niche in SS NU is being an Iron Defense + Body Press Pokemon that not only doesn't have a 4x weakness, but also has a STAB move to get past Pokemon that are immune / resistant to Body Press.
Iron Defense allows you to boost your already high Defense stat higher so you can take physical hits better. Body Press allows you to take advantage of the defense boosts and is really good coverage for Pokemon such as Stakataka, Copperajah, and Snorlax. Shadow Ball is for your Ghost STAB which is useful for Pokemon such as Mudsdale, Xatu, Decidueye, Dhelmise, Vileplume, and Golurk. Rest allows you to recover HP and heal off status conditions that would hinder you such as poisoning and burns (for Body Press). Rest also lets you become itemless since this set has Chesto Berry.
252 HP EVs helps with bulk since Cofagrigus's base HP is 58. 56 Defense EVs allows you to live a Guts boosted Knock Off from Machamp as long as Stealth Rock isn't up, even if you still have your Chesto Berry. The rest of the EVs are in Special Defense to give improve your special bulk. Bold Nature is used to give Body Press a little more power. The ability Mummy is quite useful to cripple Pokemon like Guts Machamp, as with Mummy, Machamp would suffer from the Flame Orb burn.
