Unobtainable Shiny Pokémon
In most generations there are a few Pokémon that cannot be obtained Shiny without cheating or glitches, due to either being distribution-exclusive without an in-game location or, in Generation V, being programmed so that they cannot be Shiny in the wild.

No, they cannot be shiny. The theory is that Nintendo/ Gamefreak wanted you to actually play the game, rather than soft-resetting a million times to try and get a shiny legendary.

technically any pokemon can be shiny even legendaries but in fact they are easiest to get, they do require extreme patience to get, because you save before you battle them and then reset every time it is not a shiny
Just because Reshiram and Zekrom have shiny sprites doesn't mean that they can legitimately be shiny. These Pokemon can only be shiny via hacking, so yes they can be, but it's not legit. Also, Gamefreak has programmed it such that Reshiram and Zekrom cannot be shiny in any encounter, no matter how many times you reset.

I saw a guy on youtube catching a shiny zekrom
Just because he caught a shiny Zekrom and posted it on youtube doesn't make it legit.
