I'm a bit late to this discussion, but if you wanna be cheap AF and infuriate your opponent, this is what I use...

Umbreon @ Leftovers
Ability: Inner Focus
EVs: 4 HP / 252 Def / 252 SpD
Sassy Nature
- Payback
- Double Team
- Toxic
- Moonlight

Use double team until max evasiveness, toxic, then payback. Whenever HP is in the yellow, moonlight + Leftovers, your likely back to full HP, ready to dodge almost anything they throw at you, but if one o' their Pokémon knows Aura Sphere, sorry my friend, but you're f*****. I typically do double/triple battles, so I get rid of them ASAP with my other Pokémons. Hope this helps!

This is my Umbreon in Diamond. I just started getting into competitive battles at the battle tower and this works really well.

Ability: Synchronize
EVs: 126 HP / 126 Def / 252 SpD
Careful Nature
- Toxic
- Protect
- Feint Attack
- Moonlight

I always like to start off with a toxic and then one protect, this just gives a free turn of extra poison damage. Then I'll either switch Umbreon out if it's an unfavourable matchup to save for other Pokemon or I just alternate between protect and moonlight and let the poison faint the opponents Pokemon. I only use faint attack if I'm fighting a psychic or ghost type that will only take a couple turns to faint (because that's faster than waiting for poison) or if I used protect the previous turn and my HP is close to full it just does a little of extra damage.

Don't split ev's between defenses and hp. Run Max hp and max Special defense with 4 defense. Wish is better recovery than moonlight. Faint attack is fine, but a move like foul play will probably be more useful.

Also wide lens sucks. Run leftovers.

This set should only be used in AG, because baton pass is banned from Ubers (I think). Substitute first, then Evoboost, Baton Pass in the face of a taunter, or use Double Team and then Baton Pass. The ability Anticipation is to see if the enemy packs Fighting type moves.

- Toxic
- Weather Ball / Dig

First, set up sun with the drought ability. If not, use Wish, Substitute quickly stalls out damage and Umbreon is very tanky. Toxic can deal out damage quickly each turn, Weather Ball should only be used if you run the moonlight set. It would turn into a base 100 power fire move, which also helps damage Steel types which are unaffected by Toxic.
Recommended teammates:
Torkoal- Sets up sun
Groudon- Sets up Sun and has earthquake for poison cover, Fire type stab moves for steel cover
Watch out for:
Bug Buzz-A super effective move that bypasses Substitute
+2 252 SpA Frosmoth Bug Buzz vs. 252 HP / 252+ SpD Umbreon: 342-404 (86.8 - 102.5%) -- 18.8% chance to OHKO
*Note that Frosmoth is faster, and has up to two turns to set up Quiver Dance.

I like to troll non poison and steel types with this set… you already know what toxic is there for, and mean look is so that your opponent can’t flee to reset the toxic counter.
Moonlight is for healing. Foul play is to attack, as it is unwise to have a pokémon that has no means to deal damage other than toxic!

Leppa berry is to restore Moonlight PP, as the PP for that move is pretty low. I don’t know how to deal with moves like giga drain and draining kiss though. Let me know how I can solve that!

Toxic Staller

Ability: Synchronoize
Brave Nature (+Atk -Spe)
-Toxic
-Protect
-Payback
-Moonlight

Toxic since this is a toxic staller set
Protect to stall time as toxic kicks in
Payback is stab and a back up incase umbreon battles a poison type which may be useful since umbreon is very slow from the brave nature
Moonlight for nice recovery

Wish could possibly be an option over Moonlight because it gives healing to your teammates and fits with the Protect+Toxic combo. Payback on Umbreon wouldn't do much damage even with Brave and some investment in Attack, so it could be replaced by Foul Play, which punishes Physical attackers.

Scarlet&Violet Umbreon Offensive Set

- Alluring Voice / Psychic

Umbreon is my favorite Pokémon but it's worth noting that I have not tested this set yet as I don't like EV training. The best coverage attacks for the set are Alluring Voice and Shadow Ball hitting everything but Grafaiai, Pyroar, and their prevolutions for at least neutral damage. (also, what is the abbreviation for speed in Pokémon stats?)

EVs are like this so you can be super bulky, with a teeny attack boost. Basically spam Curse until the stats max out. With Inner Focus, you won’t be able to flinch, which could create problems with this set, since now you are very slow. Then do a classic Toxic and Protect wombo combo, with Leftovers healing back some damage. And if you get taunted, you have Payback, a physical, dark type move whose power doubles if you move after your target, which is almost guaranteed with the -6 speed.
